So as I reported yesterday, I forgot to defrost the turkey.
“Run to Rainbow”, I was told, “and get a pre-made turkey!”.
“No”, said the stubborn, penurious Scandinavian. “There must be another way”.
And indeed, not only was there…
…but it rocked. The best turkey I’ve made in recent years.
I’ve bookmarked that one, Mitch. Ours wasn’t fully thawed after 5 days in the refrigerator (20 pounder) so it got a water bath. We used America’s Test Kitchen for our cooking guide – 425 for one hour, then flip the bird over and cook 2-1/2 hours at 325.
We also made sweet potatoes from scratch (not cans this year and will never go back to convenience.
Now I need good leftover recipes. 🙂

Turkey Bake Casserole MMmmmm
Layer everything in a baking dish, Potatoes, then turkey, then stuffing, pour gravy over it all
bake at 350 for about half hour or so until hot all the way through. That turkey thermometer in the middle at about 165 should do it.
Here is one online that is similar to mine, but I don’t usually use the cranberries during the baking process, and prefer potatoes for the base.

The only think that ends up in the trash at my place are dry bones and grizzle, Buy the time I am done making my soup/stew, every usable ounce of that Turkey is gobbled up *grin*

We sealed up bags of turkey meat for future soup. A friend said she made a sleigh out of a turkey breastbone for a high school biology project. 😀
